I'm not sure what hours you were told but our breakfast here at Country Inn and Suites starts at 6 am and goes to either 9:30 am on weekdays or 10:30 am on weekends. It is an old building that has had a face lift, so it does feel clean. It was cheaper than being downtown La Crosse which was very much appreciated.
